Here’s what you’ll need:

1/4 cup cooked quinoa or black lentils
1/4 cup rolled oats1/2 onion (yellow or red), finely diced1 cup finely chopped mushrooms (shitake, baby bella, or white button)
1/2 tsp salt
Freshly cracked pepper
1.5 cups black beans
1 cup grated red beets
1 tsp cumin
1/4 tsp smoked paprika
1/2 cup raw walnuts or pecans
Optional splash of worcestershire
Squeeze of lemon
